After years of trying to be what I thought I should be I have come to the realisation that actually, I should just own my
flaws quirks. Three things I have decided to own and be honest with myself over the last year:
1) How much I love pop music. Anyone who doesn’t enjoy Never Ever by All Saints or doesn’t enjoy me singing and dancing to it on a regular basis is not welcome in my home.
2) Anything or anyone related to The Hunger Games. Two words. Liam Hemsworth.
3) How much I love naughty treats. A realisiation I am not willing to suppress so instead, I work around it. Example? Hidden veg nachos. The best of both worlds!
Hidden Veg Nachos
1 onion, finely chopped
3 garlic cloves, crushed
1 small red capsicum, diced
1 small green zucchini, diced
1 small yellow zucchini, diced
1 celery stalk, diced
Half a carrot, diced
2 red chillies, finely chopped
300g beef mince – optional
Small handful of coriander
1 can of crushed tomatoes
1 can of black beans, drained and rinsed
Jalapeños to serve
Handful of mozzarella
1 large packet of original corn chips
Pre heat your oven to 170.
Heat a little oil in a large pan and over a medium heat sauté the veg for 10 minutes. Sprinkle over the cumin and paprika and stir until fragrant. If using, add the mince now and brown for 2-3 minutes. Pour in the crushed tomatoes, black beans, coriander and half a can full of water. Season with salt and reduce to a low heat. Leave to cook gently for a further 15 minutes.
To assemble mix between corn chips, vege mix, jalapeños and cheese. Bake for 15 minutes, top with extra coriander if you have any left and eat with big delicious beers.
Kitchen notes: of course anything can go here. I’ve used a mix of veg but have a play around. Chopped kale, corn, chickpeas, broccoli etc will also be amaze.
