With the wedding day soon among us I am on major spending restrictions. This means one thing… I have to find my Treat Yo’ Self day in pleasures that don’t involve Asos or Zimmerman. Lucky for the fiancé, there are just some days when all I want is cheese, rice and bread and preferably all together. So thanks to Parks & Recreation my Treat Yo’ Self day comes in the form of this insanely good dinner. Crispy prosciutto bread crumb mixed with subtle cauliflower risotto. Treat Yo’ Self day just got way more frequent :/
1 brown onion, finely chopped
4 garlic cloves, finely chopped
2 cups aborio rice
1 cup white wine
1 medium sized cauliflower, florets finely chopped
2tsp dried chilli flakes
1L chicken stock
Half a cup of finely chopped stale white bread
Handful of grated parmesan
Handful of chopped parsley
Salt & pepper
Heat a little oil in a non stick pan or pot and sauté the onion and garlic over a low heat for 10 minutes. Add the rice and stir through before pouring in the wine. Cook out the alcohol by leaving the wine to reduce until you can’t see much liquid.
Pour in half the chicken stock, all the cauliflower and chilli flakes and cook over a low heat for 10-15 minutes. Keep an eye on the rice – you want to stir the pot fairly regularly to make sure nothing burns and the rice is being evenly cooked. When majority of the stock has been reduced, add the remainder.
While this is cooking make your crumb by heating a little oil in a non stick pan and frying your bread and prosciutto until golden and crispy. Keep aside.
Taste your rice now to make sure it’s cooked then finish off with salt and pepper, parmesan and parsley and serve with the crumb over the top. Amaze.
