Benefits of losing weight just before your wedding? Your dressmaker yells at you and tells you to go eat some rice. Off I went feeling great to the local Chicken Rice guy with an order for extra rice and then off I went to make Holy Basil Chicken for dinner. Double rice. You know it was a good day.
This is kind of a mesh between cashew chicken, chilli chicken and basil chicken from your local Thai place…. only better.
Holy Basil Chicken
1 brown onion, sliced
3 cloves of garlic, sliced
2 red chillies, sliced
1 red capsicum, roughly chopped
handful of baby corn, halved
handful of green beans, chopped
2 chicken breasts, sliced very thinly
3tbs soy sauce
3tbs oyster sauce
3tsp cater sugar
10tbs chicken stock
a few sprinkles of white pepper
small sprinkle of chilli powder
large handful of Thai holy basil – if you can’t find this use sweet basil, vietnamese basil or normal basil
handful of cashew nuts
– tip: make sure that everything is ready to go… veg cut, sauces out of the pantry etc –
Heat oil in a large wok or fry pan until very hot and smokey. Add the onion, garlic, capsicum, chilli, corn, beans and chicken to the wok and stir fry rapidly until the chicken starts to colour.
Add all remaining ingredients – sauces, stock, white pepper, chilli powder, cashews, basil. Stir fry for a further 3 minutes then taste. Check the sweet, heat and oomph balance is right. You may choose to add a touch more soy or white pepper.
Serve with steamed jasmine rice.
