New year, new resolutions, new recipes. Most people in my life have mentioned cooking more or being healthy in their goals for this year so here you go. No excuses. This one is easy peasy and insanely delicious. Lil heat, lil kick and utterly good for you (ginger is super good for your gut and pretty much everything else).
I should mention that I was inspired to cook this not for an aim to be healthy but because Anne of Green Gables is making a come back. I know, it’s epic. For the love of Carrots, Gilbert and of course my personal love, Diana Berry.
Carrot & Ginger Soup
6-8 carrots, peeled and roughly chopped
1 onion, roughly chopped
2 cloves of garlic, roughly chopped
3tbs finely chopped fresh ginger
1L chicken or veg stock
Juice of 1 lime
150ml coconut milk
Salt and pepper
1/2tsp cayenne pepper – chilli powder also works
Heat a big glug of olive oil in a medium pot and over a low heat gently saute the carrots, onion, garlic and ginger for 15 minutes. You don’t want the veg to get any colour here, rather sweat out the flavour so stir regularly.
Pour in then stock and bring to the boil. Reduce to a low simmer then cook for 15 minutes or until the carrots are tender. Using a handheld blender or food processor, puree the mixture until smooth and creamy.
Heat through the lime juice, coconut milk and cayenne pepper then season to taste with salt and pepper. You should a have a deliciously sweet soup with a little heat from the ginger and cayenne and sting from the lime. Serve with extra coconut milk and cayenne if you want to be fancy 😉
