Something you perhaps don’t know about me is that I love country music and passionately feel this is a life avenue yet to be explored. The plan is to move to Nashvillle and basically become famous. I feel like my obsession with the TV show Nashville and anything Jonny Cash related means this is a real possibility. I would wear cowboy boots, say y’all and be friends with the cool people.
Given that I am off to America next week to pursue this dream (and also just go for a holiday) it feels only fitting to make Californian style taco taco tacos.
Cajun Chicken Tacos
Masa Harina (corn flour to make your own tortillas)
250g sliced chicken
1tbs garlic powder
1tbs onion powder
Bunch of coriander
1/2 cup finely sliced fennel
1/4 cup purple cabbage finely chopped
3tbs sour cream
Zest and juice of 3 limes
Mix the spices and a pinch of salt together then coat the chicken in it. Put aside to marinate.
Mix the sour cream, lime zest and juice, sugar and a pinch of salt together for your dressing. Using a mandolin or peeler slice your fennel and cabbage and mix with your chopped coriander.
If you are making your own tortillas, follow the packet instructions now. For two portions, I used 1 cup flour to 3/4 cup water but each brand differs slightly so add the water in little instalments until the flour completely binds. For those without a tortilla press – it’s not impossible just use a rolling pin and a little elbow grease.
Heat some oil in your pan then fry your chicken on a hight heat until cooked through. This should only take 5 minutes or so.
Enjoy with you fingers… and a beer.
