So, now that I am 27 I am seriously noticing my age and I am not cool with it.
Not only can I not drink a million beers anymore without any repercussion, I can’t finish off that night out with fried chicken and wake up looking and feeling fresh. Dang! I mean the hangovers I can deal with as Orange is the New Black is out and I am only up to episode two but the chicken arms!? That I cannot.
Strangely, I have also developed a love for cake and have a desire to join a knitting club. This however I do not feeling guilty about because craft days are fun and I choose my choice. But cake? This is definitely a sign of my age. Lucky that this cake is a guilt free cake version of a pina colada … without the hangover.
Lime and Coconut Cake
Adapted from the Wholesome Cook
1/2 cup honey
1/2 cup fresh lime juice
1/2 cup coconut milk
1/4 cup coconut oil
1 1/2 cups coconut flour
2tsp baking soda
1/4 cup coconut milk
1/4 cup coconut flour
Zest from 2 limes
Preheat your oven to 170 and line a baking tin.
Blend the cashews and lime juice until you get a smooth paste. Then combine the remaining ingredients in a bowl. Pour the cake mixture into the tin and bake for 30 minutes or until a skewer comes out clean.
While the cake is baking, mix together the frosting ingredients then once the cake is at room temperature spoon evenly on top.
