I have reached the conclusion that I am addicted to sugar. Actually. It’s really bad. I LOVE sweets. This is especially bad thing given that I only have 2 months left before I am on wedding body lock down. As a result… I feel the raw slice thing is good for me. Natural ingredients that add benefits to your body whilst you get your sugar kick. Don’t get me wrong these little beauties are still full of calories but they are a better alternative to a real caramel slice. Enjoy!
Around 10 dates
1 1/2 cup cashews or almonds or a mix
2 tsp vanilla extract
1 cup maple syrup
1/2 cup white tahini
1/4 cup coconut oil
1 tsp vanilla extract
2tbs raw cacao powder
5tbs rice malt syrup (honey or agave would also work)
1/2 cup coconut oil
Line a small baking tray or loaf tin with baking paper and oil slightly with coconut oil.
Using a food processor, blend the base ingredients until you have a sandy texture that is sticky.
Press the mixture down onto the lines tray and evenly spread. Place in the freezer while you continue your caramel. Again, simply blend all the caramel layer ingredients. Taste here and you may find you want more salt or more sweet flavours.
Pour over the base layer and freeze while you move onto your chocolate.
Blend the chocolate layer ingredients and pour over the top! (my chocolate layer split as I over mixed FYI so be careful to only pulse your processor. Still tastes good though!)
Freeze over night if you can but if you want to dig in, 2-3 hours will allow you to have a taste. Keep in the fridge as you nibble away! It will last up for 5 days.
