How good is it to bite into a french baguette smeared with salted butter. Honestly, that is the best thing to come out France. Bread and Butter. That and Madeline. Who agreed with me wholeheartedly.
The problem with the wonderfulness of France is that I – as an Australian- am not blessed with the wonder that is French figures and just stare in awe…. as I eat macaroons, mash potato, croissant and of course… bread and butter. But alas there is a health alternative! Sure, it’s more like a loaf but it does the job…
1 cup cashew paste
1 cup almond milk
1 tsp apple cider vinegar
1/2 tbs honey
1 tsp salt
2/3 cup coconut flour
1 tsp baking soda
Preheat your oven to 150 degrees and line a loaf tin with baking paper.
Separate the eggs in two different bowls.
Add the cashew paste, almond milk, cider vinegar and honey to the egg yolks and mix until you have a smooth paste. This will take a little while as the cashew paste will need to be worked through but don’t give up! You don’t want chunks. Once smooth, add the salt, coconut flour and baking soda and mix through.
Now for the egg whites. Whisk until soft peaks form. It will take about 3-4 minutes. Think of it as a workout!
Gradually and gently fold the egg white into the mixture. Don’t over mix! Pour the mixture into the loaf tin and bake for 40 minutes. Depending on your oven if may need a further 5-10.
